Steak in the Crock Pot

  • 4-6 steaks – you can buy one big piece of meat and cut it up or individual stks
  • 4 Tbsp steak sauce- like A1
  • 4 Tbsp dijon mustard
  • 1/2 cup white wine
  1. Combined staek sauce and dijon mustard and coat each steak before placing in the crock pot.
  2. Pour the wine over the meat
  3. Cook on low for 6-8 hrs

Tuesday 9/22/09

Chicken and Gravy

  • 4 slices of bacon chopped
  • 4 carrots thinly sliced
  • 1 lb of boneless skinless chkn breasts
  • 1 onion chopped
  • 1 cup chicken broth- we use organic so it is healthier
  • 2 oz cream cheese
  • 3 cups of brown rice
  1. Cook bacon.  Remove bacon and drain.  Do not keep the droppings in the pan
  2. Add chicken to skillet and cook until both sides are brown and done
  3. Remove chicken and add vegetables, 1/2 cup broth to the skillet.
  4. Cover and simmer 10 min
  5. Stir in remaining broth and cream cheese, cook uncovered until cream cheese is melted and sauce is thickened, stir frequently.
  6. Return chicken to skillet and cook until heated through.
  7. Spoon rice onto plate, top with chicken, sauce, and bacon.

Wednesday 9/23/09

Chicken and Pasta Sauce

  • 1 1/2 lbs Frozen Chicken tenderloins
  • 1 jar of pasta sauce
  1. Place the frozen chicken in the bottom of the crock pot
  2. Add the jar of pasta sauce
  3. Cook on low 6-8 hours
  4. Chicken should easily pull apart
  5. Serve over your favorite pasta

Thursday 9/24/09

Shrimp Scampi

  •  1 lb Shrimp- fresh or frozen
  • 1/2 stick of butter or olive oil can be substituted
  • 2 tsp minced Garlic
  • 2 Tbl white wine or lemon juice
  • 1/2 tsp salt and pepper
  • Pasta
  1. Melt butter, add shrimp, garlic, salt and pepper
  2. Cook 3 to 4 minutes until shrimo are pink
  3. Stir in lemon juice or white wine
  4. Serve over pasta

Friday 9/25/09

Old Bay Salmon

  • 1 Tbsp Old Bay seasoning
  • 1/2 tsp dill weed
  • 1/2 tsp onion powder
  • 1 lb Salmon fillets- we prefer wild caught but up to your family. Swordfish or Mahi Mahi can also be used
  1. Preheat oven to 450 degrees
  2. Mix seasonings in a bowl
  3. Place fish skin side down on a lightly greased baking dish.  Brush fish with oil and sprinkle seasoning evenly over fish
  4. Bake 8-10 minutes or until the fish flakes with a fork
  5. Serve with a vegetable and rice
