Bruscetta Chicken Bake

A favorite from Kraft Foods and Family

  • 1 Can diced tomatoes
  • 1 package of stuffing mix for chicken
  • 1/2 cup of water
  • 2 cloves of garlic, minced
  • 1 1/2 lbs of chicken, cut into bite size pieces
  • 1 tsp dried basil
  • 1 cup of shredded mozzarella cheese
  1. Preheat oven to 400
  2. Mix stuffing mix, tomatoes, water, and garlic until stuffing mix is moistened.
  3. Layer chicken, basil, and cheese in a 13*9 casserole dish
  4. Top with stuffing and bake 30 min or until chicken is done.

Tuesday 10/13/09

Foil Pack Halibut Florentine

  • 2 cups uncooked instant white rice
  • 2 cups warm water
  • 4 skinless Halibut fillets
  • 4 cups fresh baby spinach leaves
  • 1/2 cup Sun-Dried Tomato vinaigrette
  • 1 Tbsp grated parmesan cheese
  • 4 -18inch-long pieces of heavy duty aluminum foil or double layer of regular
  1. 1/2 cup of rice in the center of each of the foil pieces.
  2. Pour 1/2 cup water over each mound of rice and top with 1 fish fillet
  3. Arrange the spinach around the fish
  4. Spoon dressing over the fish and spinach
  5. Bring up foil on all sides.  Double top and sides to seal the packet.  Leave room for heat circulation.
  6. Grill on medium high for 10 min.
  7. Before eating sprinkle each serving with parmesan cheese

This is another great dinner we have gotten from Kraft Food and Family.  Their recipes are usually quick, easy, and taste great.

10 Layer Crock Pot Dinner

  • 1 1/2 lbs ground beef
  • 6 medium potatoes, thinly sliced
  • 1 medium onion, thinly sliced
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 15oz can of corn, undrained
  • 15oz can of peas, undrained
  • 1/4 cup of water
  • 1 can of cream of mushroom soup

As with any recipe, you can decide if you prefer fat free mushroom soup, low sodium, or regular.  I only can suggest but you can make the ultimate decision.  The same goes for the quality of the ground beef, it is up to your family.

  1. Brown the ground beef and then you are going to create layers in your crock pot.
  2. Layer 1- 1/4 of the potatoes, mixed with 1/2 of the onions, salt and pepper
  3. Layer 2- 1/2 the can of corn
  4. Layer 3- 1/4 of the potatoes
  5. Layer 4- 1/2 of the can of peas
  6. Layer 5- 1/4 of the potatoes, mixed with 1/2 of the onions, salt and pepper
  7. Layer 6- Remaining corn
  8. Layer 7- remaining potatoes
  9. Layer 8- remaining peas and water
  10. Layer 9- ground beef
  11. Layer 10-  mushroom soup
  12. Cover and cook on high for 4 hours

This is always a huge hit with the kids and it so easy to make.

Linguine with Clams

  • 1 -50ct bag of clams
  • 2 1/2 cups water
  • 1 pkg of fresh linguine
  • 2 Tbsp italian parsley, chopped
  • 1/2 stick of butter
  • 2-3 Tbsp of garlic depending on your love for garlic
  1. Rinse clams in cold water.  Get rid of any that may be broken open.
  2. In a braising pan, add water 1/2 of the butter and garlic.  Bring to a boil.
  3. Add clams, cover, and steam over medium heat about 8 mins.
  4. Get rid of any clams that did not open and using a slotted spoon place other clams in a large bowl.
  5. Add pasta to the boiling liquid.  Cook about 3 min.  Do not drain. 
  6. Add remaining butter, garlic, and parsley, and combine
  7. Divide the pasta into 4 plates.  Top w/ clams and sauce.
  8. Broccoli makes for a quick and easy side dish.

Chicken and Potato Bake

The beauty of this one is that it is all in one pan, very few ingredients, and even better-very little prep time!

  • 1 1/2 lbs bone in chicken pieces
  • 4 large potatoes cut into wedges
  • 1/4 cup Italian dressing
  • 1/4 cup grated Parmesan cheese
  1. Preheat oven to 400
  2. Place Chicken and potatoes in a 13*9 baking dish
  3. Pour dressing over chicken and potatoes and then sprinkle with cheese
  4. Cook for an hour or so until the chicken is done.
  5. For a little bamm! at the end, garnish with a little chopped fresh parsley
  6. Any green veggie would be great compliment, green beans, asparagus, salad, your choice.
